I found the following online textbook listed under course readings for an intermediate GIS class:

Additionally, I ran across this online text:

There also appears to be a lot of ArcGIS workshops involved in the intermediate level coursework, so maybe it's worth trying to get the school to update our license? If we could make this happen, then I would vote for ordering a workbook such as this one:
